Asam padeh atau asam pedas yang sering hadir dalam olahan daging atau ayam dapat juga kita variasikan dalam ikan Gurame Asam padeh yang nikmat.

Bahan (ingredients) :
2 ekor ikan gurami, potong 4 bagian (2 fish gurami, cut 4 parts)
2 sendok makan air asam jawa (2 tablespoons of tamarind water)
1 sendok teh garam (1 teaspoon salt)
1 batang serai, memarkan (1 stalk lemongrass, crushed)
1 lembar daun kunyit, buat simpul (1 sheet of turmeric leaves, make a knot)
4 lembar daun jeruk, buang tulang daunnya (4 pieces of orange leaves, remove the bone leaves)
1 cm lengkuas, memarkan (1 cm galangal, crushing)
3 buah asam kandis (3 pieces of kandis acid)
600 ml air (600 ml of water)
2 sendok makan air asam jawa (2 tablespoons of tamarind water)
1 sendok teh garam (1 teaspoon salt)
1 batang serai, memarkan (1 stalk lemongrass, crushed)
1 lembar daun kunyit, buat simpul (1 sheet of turmeric leaves, make a knot)
4 lembar daun jeruk, buang tulang daunnya (4 pieces of orange leaves, remove the bone leaves)

3 buah asam kandis (3 pieces of kandis acid)

Bumbu halus (ground spices) :
8 butir bawang merah (8 grains of red onion)
2 siung bawang putih (2 cloves of garlic)
3 buah cabai merah besar (3 large red peppers)
4 buah cabai merah keriting (4 pieces of curly red pepper)
1 cm jahe (1 cm ginger)
2 cm kunyit, bakar (2 cm turmeric, burn)
2 butir kemiri, sangrai (2 grains of pecan, roasted)
2 1/2 sendok teh garam (2 1/2 teaspoons of salt)
1/2 sendok teh gula pasir (1/2 teaspoon of sugar)
Cara membuat Gurame Asam Padeh (How to make Gurame Padeh Acid) :
- Lumuri ikan dengan air asam jawa dan garam. Diamkan 20 menit. (Brush the fish with tamarind and salt water. Let stand 20 minutes.)
- Didihkan air, serai, daun kunyit, daun jeruk, lengkuas, dan bumbu halus sampai mendidih dan harum. (Boil water, lemon grass, turmeric leaves, lime leaves, galangal, and spices until boiling and fragrant.)
- Masukkan ikan. Masak sampai berubah warna. Tambahkan asam kandis. Masak sampai matang dan meresap. (Enter the fish. Cook until it changes color. Add the kandis acid. Cook until cooked and soaked.)
